Christmas Piccalilli Recipe!

Christmas Piccalilli Recipe!

This Christmas Piccalilli recipe is perfect to make right now. You can eat it right away (as I did last night on a jacket potato!) or keep it for a couple of months before opening. If you like piccalilli, this home made version is kick-ass and so much better than what you can buy (I don’t think there are many companies left making it!).

Organic Slow Cooker Veg & Lentil Curry

Organic Slow Cooker Veg & Lentil Curry

This organic slow cooker veg and lentil curry is seriously quick and easy to prepare. I used whatever veg I had left over - it all works! I'm loving my slow cooker at the moment as I usually have 10 minutes in the morning to pop everything in, and then leave it to cook for a minimum of 8 hours so I can eat it whenever I'm home from work, which can often be quite late.

Organic Potato Style Waffle Cakes!

Organic Potato Style Waffle Cakes!

These organic potato waffle style cakes are perfect for breakfast or brunch. The amazing thing about them is that you can freeze them once cooked, and pop in the toaster to reheat while you poach your eggs; this creates a super fast meal. You might need two cycles with the toaster depending on how crispy you want them.

Organic Mince Plait

Organic Mince Plait

Happy Organic September!!! I apologise for the lack of recipe last week, we drove to Heathrow to take my Dad to the Airport and also fitted in a Thorpe Park visit! This organic baked plait can be made with organic beef mince (we love Daylesford or Ocado own brand) or organic vegan soya mince such as Clearspring. I made this for my Dad as he loves his pastry when he visits the UK from the Caribbean.

Organic Sweet and Sour Vegetables

Organic Sweet and Sour Vegetables

This sweet and sour veg recipe is a fast version with a few easy tweaks built in. You can use most veg (with the exception of veg like potatoes) and create a whole Pride in Hull rainbow of colours with your dish. I like to serve it on its own or with plain steamed rice. The most time you will take is chopping the veg up! If you own a wok, you can also get wokking with this one.

Organic Rustic Loaf

Organic Rustic Loaf

This organic bread recipe is quick and simple. It's rustic, fairly heavy and dense, on purpose, and goes extremely well with one of my soup recipes on the website blog, or toasted for boiled egg soldiers. It also freezes well and you can toast the frozen slices before spreading with organic butter. I love this brown flour from Marriages, it's a bit lighter than full wholemeal and to be honest, was all I had in the cupboard at the time. You can use any flour, particularly if you have some that is nearing its best before date! It doesn't have to be strong bread flour with this kind of loaf.

Malaysian Curry

Malaysian Curry

Malaysia is one of our favourite countries! We got married there and have since been back several times, in fact, it's our most visited country in South East Asia. This curry is a variation on the type you normally get in Muslim restaurants and street vendors. I've modified it to suit our store cupboard and shopping order that week, and added a few of my own tweaks. Malay curries are traditionally quite dark in colour, and this one is no exception. It's incredibly fragrant and healthy.

Organic Chickpea Curry

Organic Chickpea Curry

TWS Organic Kitchen is back from our holidays! This organic chickpea curry is my own recipe and is very mild and creamy. It's a store cupboard special, combined with whatever veg you have to hand. You can add extra chilli (fresh, powdered, flakes etc) if you like it spicier. It's also naturally vegan. I think this works whatever the weather.

Polish Style Potato Salad

Polish Style Potato Salad

This polish style potato salad reminds me of the little pots you can buy from our local Polski Sklep in Hull or during our travels to Karakow and Gdansk. It's a real treat and so nice to assemble your own. The carrots are certainly unusual where our English version is concerned; they do, however, add a sweetness, and also a slight crunch if you don't overcook them.

Steve's Favourite Pickled Cabbage!

Steve's Favourite Pickled Cabbage!

This pickled cabbage is a real favourite in our house. It's very easy to make and you can tweak the flavours as you go. Don't be put off by the look of it at first, the brown coloured pickling juice turns to a vibrant purple after a couple of days, and looks stunning when you serve it. It's also fairly raw, and stays crunchy but palatable.

Organic Seasonal Leek and Potato Soup!

Organic Seasonal Leek and Potato Soup!

This organic leek and potato soup is a real seasonal winner. The leeks are something special (it wouldn't be the same using onion), and the addition of the butter gives it a creamy texture without the cream. These M&S Organic leeks from Ocado are delicious and don't need a lot of washing. I add turmeric for colour, health and flavour.
