Cucumber and Cumin Raita

This organic raita recipe is a standard for me to accompany a curry. It's super easy and will also last a 2-3 days in the fridge. I had Yeo Valley Greek Yogurt on this occasion, but I often use their Kefir too, very yummy.

Makes enough to accompany 2-3 curry servings, depending on how much you like.

You'll need:

1/2 pot (225g) of Greek Style Yogurt (mine was Yeo Valley Organic from Ocado).

Grated piece of cucumber, about 3cm length (you can squeeze the juice out if you like after grating, just squeeze it in your hands over a bowl and discard or drink the juice).

2 tsp ground cumin (don't leave this out unless you really don't like it).

1/4 tsp salt.

1 -2 heaped dessert spoon(s) of chopped fresh coriander.

How to:

Mix everything together and serve right away. It keeps well in the fridge for 2-3 days if you cover it air tight.
