Organic Apple Crumble!

My Dad lives in the Caribbean and he when he visits the UK he loves to eat certain foods that just aren’t the same out there. I made this individual crumble for him and he loved it - you can simply increase the quantities to suit the number of portions you wish to serve.

You’ll need:

15g butter, mine was Calon Wen slightly salted butter.

35g flour, mine was M&S organic white flour.

5g desiccated coconut, mine was from Crazy Jack’s at Ocado.

15g sugar, mine was from Billington’s at Ocado.

Sprinkle of flaked almonds, mine were the excellent Crazy Jack’s.

One organic eating apple, peeled, cored and chopped as small as you like. Mine was from the own range at Ocado.

1/3 tsp Steenberg's Cinnamon powder.

One traditional ramekin (I used a Pyrex 10cm).

How to:

First pop the apple in a ramekin and stir in the cinnamon. Bake in the oven for about 15 mins until the apples are fairly soft.

In a bowl, rub the butter into the four fairly roughly until you get small chunks. Stir in the sugar and the coconut.

Sprinkle the crumble mix on top of the apple.

Sprinkle with flaked almonds, then bake at 220c for about 20 mins or until the top is slightly browned.

Serve with custard, cream, ice cream or on its own! Enjoy.
