Polish Style Potato Salad

This polish style potato salad reminds me of the little pots you can buy from our local Polski Sklep in Hull or during our travels to Krakow and Gdansk. It's a real treat and so nice to assemble your own. The carrots are certainly unusual where our English version is concerned; they do, however, add a sweetness, and also a slight crunch if you don't overcook them.

All of my #organic veg was from Ocado, with the exception of the gherkins which I didn't have as organic, and so I purchased some from our local Polish supermarket. The gherkins add something special, in my view, so don't leave them out.

You could tweak this in many ways: a tsp of mustard, fresh dill, diced green beans, fresh minced garlic, a dash of vinegar, just use your imagination!

Makes 4 decent side portions.

You'll need:

2-3 smallish white potatoes, don't bother to peel them, chopped as small as you like. Mine were about 1cm ish diameter.

1 medium carrot, finely diced, peeled if you like.

1 tsp salt.

2 - 3 heaped tsp of red onion, finely chopped.

2 heaped tsp of gherkins, finely chopped.

A sprig of fresh parsley, if you have it (mine was from our garden), very finely chopped.

4-6 dessert spoons of mayonnaise. I genuinely love the one from Hellman's.

Ground black pepper.

How to:

Gently cook the potatoes and carrot in water with the salt until just tender. Don't overcook! So check them regularly. As mine were organic they cook quicker than conventional farmed veg, so it took about 8 mins. Place in very cold water and leave to cool.

Mix everything else in a bowl, and add the potato and carrot once it is cool. Chill for about an hour until very cold, and serve or will keep in the fridge for 2-3 days if you cover it well. Enjoy!
