These crispy organic onion rings are oven baked and absolutely delicious and actually fairly healthy. The ones you buy from the shops or restaurants mostly seem a little greasy and soft. Red or white onions work just fine, and any size (as long as they are not too small like a shallot) works perfectly too.
This makes a large bowlful.
You'll need:
1-2 medium sized onions, peeled, sliced into 1/2 cm slices then separated into rings.
1 beaten egg mixed with 1 tbsp mayonnaise.
1/2 cup panko breadcrumbs.
1-2 tbsp flour seasoned with salt and pepper.
Oil to bake.
How to:
Soak the onion rings in water. Then take one out at a time and dip in the flour, then into the mayo/egg mix. Then dip in the panko.
Place on a lined baking tray and drizzle with oil.
Bake for 20-30 mins on 200c (fan) oven until crispy.
Serve right away, although they do stay crispy for an hour or two. Enjoy!
