This overnight oat recipe is Steve’s favourite weekend treat! I vary the ingredients depending on what’s in our store cupboard, and also our freezer, as we are a big fan of Pack’d Organic frozen fruit and use it in smoothies as well.
This serves one, but you can multiply it to make more. I’d suggest you leave it the fridge for a minimum of three hours before eating, or overnight, as the name suggests :)
You’ll need:
A couple of large handfuls of organic oats (these can be the larger jumbo oats or the finer ones)
1 heaped dessert spoon of frozen (or fresh) berries - I used Pack'd frozen blueberries
3 tsp desiccated coconut
3 tsp flaked almonds
3 tsp sultanas
Enough milk (or plant based alternative) to cover the mixture
How to:
Layer all of the dry ingredients and fruit, in a bowl, I usually make about three to four layers.
Gently and slowly pour organic whole milk over the ingredients. When you see the milk at the top of the bowl, wait a few moments, and if it soaks in, add a little more milk until everything is gently covered.
Cover and chill for a minimum of three hours, or overnight.
This will keep in the fridge for a couple of days, as long as you cover it airtight, so you could make two days worth in one go, if you like.
